Herbal tea, or tisane is any beverage made from the infusion of herbs, spices or other plant material in hot water and usually does not contain caffeine. These drinks are distinguished from true teas (black, green, white, oolong, & pu-erh) which are prepared from the cured leaves of the tea plant, Camellia Sinensis. In most countries, the word ‘tea’ is only used for leaves of the Camellia Sinensis. Therefore, the phrase ‘herbal tea’ cannot be used. These beverages are correctly labeled infusion or tisane.

Like beverages made from true teas, tisanes and infusions can be served hot or cold. They have been used for nearly as long as written history. They should be steeped in boiling water for 6-10 minutes
